Will the writing come off completely, or does it leave marks behind?
Wipe it soon after writing and it clears cleanly. If a note has sat for a week or two, a slightly damp cloth takes care of it. Avoid permanent markers — those won't lift.
Will it stay on the fridge, or slide down when the door shuts?

Can I use it on a stainless steel fridge?
